About our cheeses
Our Pitchfork cheddar is made from unpasteurised, organic cow’s milk and has a dense, creamy texture. Distinguished by its full-bodied flavour with a succulent and lactic bite...'a gorgeous cheese with a taste of history'
It is made only 5 miles away from Cheddar itself, using traditional methods, in an open vat, before being cloth-bound with lard. Pitchfork is matured with us for an exceptional 10 -12 months, to develop it’s signature flavour.
Gorwydd Caerphilly offers multiple flavours within one cheese, the centre is sharper, rich and fresh whilst the rind presents a contrasting earthy, natural flavour....'mild and lactic nature with a mushroomy flavour and velvety texture'
It is an unpasteurised cheese made with cow’s milk and animal rennet. It is described by our customers and fellow cheesemongers as “clean tasting with slight citrus notes” and we are confident that you will never have tasted a Caerphilly like ours before.
A soft creamy texture and fantastic variation in flavour; from a nectar of biscuity notes under the rind to juicy acidity in the centre. Joe Schneider and the team at Stichelton Dairy make a top quality blue cheese in the time honoured traditonal way, using raw milk from a single herd and traditonal cheesemaking techniques in their farmhouse.
Using a traditional Stilton recipe and raw milk gathered from morning milking, Stichelton is made over 24 hours, allowing the natural flora in the milk to develop. The cutting and ladeling of the curds is a painstaking overnight process, and when this is complete the cheeses mature for a further two weeks. Each batch is tested for ripeness by the expert team, who have to take into account seasonal variation and many other factors – seasonal variation is built into the fabric of this cheese and is the sign of a true artisan product. Only then will the Sticheltons leave the maturing room, to be cut and prepared by the cheesemongers. This blue is a true labour of love, as reflected in its multiple long lasting flavours.
Mor Snap Crackers are manufactured by Artisan Biscuits. These scandanavian inspired crackers have a satisfying snap and are a delicious accompaniment to a cheeseboard.
Somerset Membrillo is a quince ‘cheese’ made in Somerset, the same county as our dairy, by our friend Trish Maunder. Membrillo is a sweet quince paste, fantastic with Christmas meats and delicious alongside our cheese. It was once commonly made in the U.K. but Trish is now one of a very select few who still make Membrillo, reviving this fantastic heritage food. In fact, she makes every single jar of Membrillo herself from her farmhouse kitchen, sourcing the quinces from the grounds of her farm which has been in her family for 100 years. Traditionally Trish’s Somerset Membrillo is only made from the quinces in her farm garden but this year, our Dairy Manager Ben provided quinces from his own family garden, making this our most personal collaboration yet!
